The black sand of Perivolos retains heat through the afternoon, the water is clear, and the beach itself is long enough to breathe. This is the southern face of Santorini, open to the Aegean, with nothing between you and the horizon.

Cocktails and Drinks

The bar at aegean Safran takes its work seriously. The cocktail menu includes signature recipes built by an experienced team. Whether you start the morning with a refreshing fruit cocktail on the sunbed, move to something longer and colder at noon, or shift to wine as the afternoon softens, the drinks program covers the full arc of a beach day.

The wine list leads with Santorini labels: Assyrtiko, Athiri, Aidani for whites, Mavrotragano and Mandilaria for reds. Local wine, local beach. It is the natural pairing.

Food All Day

This is where aegean Safran separates itself from a standard beach bar. The kitchen is a real restaurant kitchen, run by Christos Siosios and his son Miltos, a family team with more than 30 years in Greek hospitality.

By day, snacks and lighter plates work well alongside a sunbed. The Santorini fava (11€) with caper crumble and pickled onions, the Santorini tomato fritters (12€) with cream cheese, the white tarama mousse (8€) and fresh cut fries from Naxos (6.50€) are all designed for exactly this kind of eating: relaxed, by the sea, without any particular rush.

From the Aegean starters, the fried calamari (17€) with tarama mousse, fresh grilled sardine (16€) with tomato tartare, and steamed mussels (16€) with garlic, thyme and Santorini Assyrtiko are mid-day staples that feel right with cold white wine and warm sand nearby.

The Evening Shift

At some point the light changes. The sun drops toward the water, the temperature becomes perfect, and the beach bar transitions into something else entirely.

The lounge music adjusts. The candles come out. The full dinner menu opens: grilled octopus (25€), butter shrimps (25€), the Mediterranean velouté fish soup with saffron (18€), pasta and risotto dishes, the Aegean fish fillet (35€). Tables on the sand face the sea directly. On a clear night, the stars are included at no extra charge.

A seafood dinner by the beach in Santorini is one of those experiences that is easy to promise and difficult to deliver. The kitchen here has been doing it for over 30 years. That is the difference.

A Full Day, One Place

The logic of aegean Safran as a beach bar is straightforward. You arrive in the morning, take a sunbed, order a coffee or a cocktail, swim, eat lunch, swim again, have another drink as the afternoon winds down, and stay for dinner.
